Sunshine and pancakes…

Is how I felt upon waking up this morning! My 4 a.m. morning grumble that helps me balance myself out was so loud all I could do was chuckle until the sunrise. Whatever happened in that grumble was needed…exit stage left please so I can enjoy the rest of the day!

So I was thinking: if I do my best everyday, is there really anything to regret? Lose? By the time I get the chance to figure all the “what ifs” out, I’ll be long gone from this land. So hell, why NOT give it a shot? Just because things may not pan out perfectly or according to my schedule, surely doesn’t mean there’s no hope for divine intervention to take place. For the past week, I have had the luxury of multiple confirmations pertaining to life and meeting God halfway. I take one step toward Him, he backs up two. I move forward-step step…He glides to the left. Upon my attempt to glide, He lifts my arm and spins me around. It is this moment I realize no matter where I’m moving, He is there. Holding my hand at that! As I spin around, He brings me into His arms and whispers, “I’m always with you, even if our steps don’t match.” It will be my pleasure to keep daydreaming & praying, but I will be sure to include the portion of WALKING IT OUT so that at the next dance, I hope to be able to show God some more solid moves!

Blueberry Pancake

Sunshine Pancakes

INGREDIENTS:

3/4 c. All Purpose Flour

1 1/2 tsp. baking powder

1/2 tsp salt

1 1/2 tsp white sugar

Dash of Β nutmeg

1/2 c. milk

1/2 egg

1 tsp vanilla

1 TBSP butter, melted

DIRECTIONS:

1. In a large bowl, sift together the flour, baking powder, salt, sugar and nutmeg. Make a well in the center and pour in the milk, egg, vanilla and melted butter; mix until smooth.

2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Serves 4.
