If you use all that you have, more will come to you. Be it brains, beauty, the ability to make another smile, it’s all the same. I have found it to be true in the land of cooking too! How many times have you loved a recipe, only to find you have NONE of the ingredients?! Say no more, you’re among friends. In the days of menu planning and grocery shopping for others, I have learned to leave one day open (at least) for a “freestyle” meal…meaning use whatever is leftover from slicing and dicing and in the cabinets before going out to get more food. Saves time, money and my favorite thing, leaves NOTHING wasted. My featured meal is P-I-Z-Z-A! It’s delicious, fun to make and a personal favorite way to use the last sliver of chopped vegetables. Besides, since when can one go wrong with pizza? It would be on the menu everyday if left up to me.
I hope this recipe bring you as much joy to your hearts and bellies as it did for mine. Don’t stress if you don’t have all the ingredients, pizza is by far the BEST food for your own substitutions. The point is to have fun and to get in touch with your creative side… Enjoy!
1 Loaf of French Bread, sliced into 1 inch thick pieces.
Tomato Sauce or Sauce from a Spaghetti Jar
Cheese of your choice (in picture I used Shredded Cheddar, Mozzarella and Crumbled Feta)
Toppings of YOUR cabinet/refrigerator’s choice, ha ha! (Below you’ll find Spinach, Red Onions, Cherry Tomatoes, Minced Garlic & Ground Turkey)
Basil, Salt & Pepper to taste.
1. Add a thin layer of butter to each slice of bread.
2. Add Tomato Sauce
3. Add cheese. (I saved the Feta for the topping.)
4. Add remaining toppings.
5. Sprinkle each pizza mini with Feta Cheese, Salt, Pepper and Basil.
6. Bake on cookie sheet (or foil) at 350*F for 5-7 minutes or until cheese is melted.
7. Enjoy your creation!
This meal goes great anytime of the day, including dinner if you have the whole loaf of bread. Perfect with a salad and a glass of wine. Even better as a healthier option for midnight snacking. Tell me how you dressed yours!! 🙂
